Introduction

This meat loaf is not like your usual egg, catsup and bread crumbs fare. It is light and moist, with the unusual twist of tapioca for bonding. Ingredients

    2 # Ground Beef, Sirloin 85/15
    1 Tbsp Parsley Flakes
    2 tsp Salt
    2 tsp Garlic or Garlic Powder
    3 Tbsp Chopped Onions
    1 Lg or 2 Reg Cans Whole Tomatoes
    2 Tbsp Pearl Tapioca

Directions

Put meat, parsley flakes, salt, garlic, onions, tomatoes and tapioca in a large microwavable casserole dish. With clean hands, mix all ingredients together well, making sure to crush tomatoes between fingers. (For some reason, the crushed whole tomatoes taste so much better than diced do.)

Put cover on dish and place in microwave (recipe uses 1,000 watt). Set timer for 20 minutes, then check. It should have a crusty look to the top. For lower wattage microwaves, increase time to 30 minutes, or cook until done.

Serve hot or cold. Serving size is 1/8 of meat loaf, approximately four ounces.
