Spinach soup

Number of Servings: 6

Ingredients

    6 cups vegetable broth
    1 small onion, chopped
    2 baking potatoes, sliced into chunks
    1 1/2 bags fresh spinach
    1 C sliced turkey kielbasa
    1 tsp low fat sour cream or greek yogurt

Directions

Pour broth and onion into a pan. Bring to a simmer. Add potatoes and cook until they are tender. Add the kielbasa and cook another 15 minutes on low. Add spinach and cook until wilted.

Serve with 1 tsp low fat sour cream or greek yogurt.
