Blueberry Oatmeal Muffins

Introduction

These are really great muffins. You can make in regular sized muffin tins, or try the small muffin cups for a little snack. If you do reduce the portion size, they become a snack sized treat for 76 calories each. These are really great muffins. Ingredients

    flour, sugar, baking powder, baking soda, salt, fat free yogurt (vanilla makes a nice flavor), egg white, canola oil, frozen blueberries (make sure they are frozen or the juice will mix in the batter giving it a slightly greenish tinge), oatmeal and 1% milk.

Directions

Preheat oven to 350.
Line 24 muffin tins with liners
Sift, flour, sugar, baking powder, baking soda and salt into medium mixing bowl. Once sifted add oatmeal
In large mixing bowl, whisk yogurt, eggs and oil
Add dry ingredients to yogurt mixture and mix until combined
Fold blueberries into mixture, but try not to overmix
Divide evenly among tins
Bake until golden 22 min
Let cool for 5 minutes before transferring to wire rack
