Vegetable beef soup

Number of Servings: 16

Ingredients

    1 Tbsp vegetable oil
    1 1/2 lbs Beef ( diced )
    1 Med Onion ( diced)
    2 Cups Diced Celery
    2 Cups diced Carrots
    6 Red or White Potatoes( diced)
    2 -28 oz cans Stewed Tomatoes with onions and peppers
    2 cups beef broth
    60 oz water
    1 tsp black pepper
    1 tsp salt
    1 tsp garlic powder
    1 tsp onion powder

Directions

In a large soup pot., saute onion and celery. Add diced beef and seasonings. I cut up a roast in to small pieces trimming the fat. Brown beef. Add vegetables and tomatoes, beef broth, and water. Simmer several hours.
