Chicken with thyme and raspberry balsamic reduction

Ingredients

    12 oz chicken tenders
    2 TBSP EVOO
    2 tsp thyme
    salt/pepper to taste
    1/2 C balsamic vinegar
    3 TBSP raspberry preserves

Directions

Heat the oil over medium heat. Cook chicken for 7 min or so, until browned. Flip chicken, season with salt, pepper, and thyme, and cook another 7 to 12 minutes, over medium heat.
Remove chicken. Deglaze pan with 1/2 cup balsamic vinegar. When half reduced, add and whisk in raspberry preserves. Return chicken to pan, and coat with reduction, or drizzle reduction over the tops of the chicken pieces.
