Catfish Stew

Introduction

Agreat cool weather meal. Agreat cool weather meal.
Number of Servings: 8

Ingredients

    1 pound catfish fillets, dice into 1" cubes
    4 carrots, diced
    2 celery stalks, diced
    1 pound red potatoes, cut into 1" cubes
    1 large onion, diced
    2 teaspoons fresh thyme, chopped
    1 tablespoon fresh cilantro, chopped
    1 tablespoon fresh basil, chopped
    1 1/2 teaspoons dried oregano
    1 bay leaf, remove before serving
    1 teaspoon hot pepper sauce
    2 tablespoons A-l sauce
    1 can diced tomatoes

Directions

Place carrots, potatoes, celery and onion in large pan or dutch oven, cover with water and cook over medium heat 10-15 minutes. Add remaining ingredients and 2 quarts of water. Bring to boil, reduce heat and simmer 30-45 minutes until vegetables are done to your taste.
NOTE: You can use all fresh or all dried herbs or any combo you like. I used these because these are what I have.
