Ingredients

    1 2/3 cups semi sweet chocolate chips
    2 Tbs. butter
    1/2 cup granulated sugar
    1 large egg
    2/3 cup flour
    3/4 cup heavy whipping cream
    1/3 cup chopped walnuts

Directions

Preheat oven to 325 degrees.
Spray mini muffin pan with non-stick spray that has flour added.
Place 2/3 cup chocolate chips in microwave safe bowl with the butter. Microwave on high 40-60 seconds until smooth, stirring after each 20 second interval.
Add sugar and egg, stir until smooth.
Add flour and stir until just incorporated.
Divide batter evenly among wells and flatten the top to make a smooth surface.
Bake 10-12 minutes or until edges are set (Do not overbake).

While these are baking, pour heavy cream into microwave safe bowl and heat on high 1-2 minutes until hot.
Add the 1 cup chocolate chips and stir until smooth. Place bowl into freezer for 10 or more minutes until mixture is cool and starting to thicken (makes a ganache).

After brownies have been taken out of the oven and cooled 2 minutes, press the tops with your thumb to make a well. Cool in pan another 3 minutes and carefully remove.

Spoon or pipe (you can put it in a plastic baggie and cut the corner out) the ganache into each brownie well. Garnish with chopped walnuts (you an also use a cherry, raspberry, whipped cream, etc., but I used walnuts and included them in the calorie count).
