Turkey Taco Pie

Ingredients

1 lb lean ground turkey burger
1 cup onion, chopped
1/2 cup frozen corn, thawed, drained
1 pkg low sodium taco seasoning mix
1/2 cup water
1 can (4.5 oz) of chopped green chiles
5 10" flour tortillas
1 cup fat free shredded cheddar cheese
Fat-free sour cream, if desired
Directions
1. Heat oven to 350 degrees. In non-stick skillet, brown turkey & onion until thoroughly cooked, drain. Add the taco seasoning, water, corn and chiles to mixture. Reduce heat to low and simmer uncovered 5 minutes.
2. Spray 9-inch glass baking dish with cooking spray. Place 1 tortilla in casserole, top with about 3/4 cup of the meat mixture and 3 tbs of cheese. Repeat layers 3 times. Top with remaining tortilla and remaining cheese.
3. Bake, uncovered, 30-40 minutes or until hot and cheese is melted. Cool 5 minutes. Serve with fat free sour cream if desired.
