Vegetarian Mexican Bake

Introduction

A yummy dinner that is great for busy nights A yummy dinner that is great for busy nights
Number of Servings: 4

Ingredients

    1 can of diced tomatoes
    1 can of black beans
    1 can of yellow sweet corn
    1 small can of green chili peppers
    1/2 cup of fat free shredded chedder cheese
    Handful of baked tortilla chips
    garlic powder to taste
    chili powder to taste
    salt and pepper to taste

Directions

Add can of tomatoes to a large skillet , place on stove on medium high heat. Rinse and drain beans, add to skillet. Next drain corn and chilis and add to skillet. Stir all ingredients together making sure they are cooking evenly. Add garlic powder, salt, pepper and chili powder. (Personally I like a lot) Pre heat broiler. Once everything is cooked evenly, pour mixture into a 12X9X2 1/2 glass baking dish. Crush tortilla chips and sprinkle over the top of the casserole along with the shredded cheese. Place dish into oven and broil for about 2 min or until cheese and chips are starting to brown. Let cool for about 1min and then cut into pieces. Personally I eat mine in a bowl, but it is also great in your favorite low fat tortilla.
