Veggie Fish Chowder

Number of Servings: 4

Ingredients

    450g (1 lb) firm-textured white fish, cut into 4-pieces
    Season with freshly ground pepper to taste
    2 large carrots, thinly sliced
    2 stalks celery, thinly sliced
    250ml (1 cup) fresh snow peas, halved diagonally
    15mls( 1tbs) olive oil
    1-14oz tin vegetable broth or 1 cube crushed
    2 1/4 oz cup water
    1-4oz pkg butter-herb-flavored mashed potatoes
    Parmesan Cheese, Shaved

Directions

1. Season fish lightly with pepper. In a 4-quart Dutch oven cook fish, carrots, celery, and snow peas in hot oil over medium heat for 2-3 minutes.
2. Add broth or crushed cube with water, bring to a boil, reduce heat, simmer, covered until fish flakes when tested with a fork.
3. Place mashed potato mixture in a small bowl. Carefully remove 1 1/4 cups hot broth from Dutch oven, stir broth into potatoes (mixture will thicken.)
4. Divide mashed potato mixture among four bowls. Break fish into bite-sized portions. Ladle hot fish and vegetable mixture over potatoes. Season with salt and freshly ground pepper to taste. Top with Parmesan Cheese shavings. Serves 4.
