Tomato Raita

Ingredients

    1 Cucumber, Sliced
    2 Med. Tomatoes Chopped
    1 Sml. Onion, finely chopped
    100g Low Fat Plain Yogurt
    4 Tbsp Chopped Parlsey
    2 tsp dried coriander (or 2 tbsp of fresh)
    1 tsp Ground Cumin

Directions

Toss together tomatoes, onions and cucumber. Drain off any excess liquid.
Combine yogurt with herbs, pour over sald and mix gently with spoon.
Cover and refrigerate until ready to serve.
