Veggie Wrap with Honey Mustard

Introduction

Ingredients

    1 medium sprouted- or whole-wheat tortilla
    1 cup mesculn (mixed salad greens)
    1/4 cup sliced raw zucchini
    1/4 cup sliced red onion
    1/4 cup sliced red, orange or yellow bell pepper
    1/4 cup sliced mushrooms
    1 Tbsp chopped fresh cilantro
    1 tsp honey
    1 tsp dijon mustard

Directions

To mix honey mustard dressing:
Stir together honey and dijon in small bowl until well-combined.

To assemble wrap:
Place cold tortilla on flat surface. Load down the center with all the veggies, then drizzle honey mustard dressing over the top. Wrap together and enjoy.

I've also added ground flax and pumpkin seeds to this. Just treat this as a salad in a wrap. Any salad that tastes great in a bowl will also taste great wrapped in a whole-grain tortilla!
