3 cups baby spinach
1 tablespoon minced garlic
5 ounces Trader Joe's Chevre Fine Herbs Goat Cheese
32 wonton wrappers
In a large pan sprayed with cooking spray, add the garlic and cook on medium heat until they begin to turn golden. Add spinach and cook until wilted.
Put the cooked spinach mixture in a bowl with the goat cheese. Stir until combined.
Put a heaping teaspoon of the spinach in the center of a wonton wrapper. Fold the wonton in half (corner-to-corner) to make a triangle. Lightly pinch the edges together to form a seal. Pinch the two free corners of the triangle together to make it into a wonton shape.
Place wontons on a greased cookie sheet and bake at 425 for 10 minutes or until golden.
Serve immediately or at room temperature.
Yield 32 wontons.
