Spicy Peanut Balls

Ingredients

2 cups (cooked) long-grain white rice
1 cup chopped peanuts, unsalted
.5 tsp salt
1 tsp ground ginger
1 tsp paprika
1 tsp chili sauce
1 tablespoon Trop 50 Orange Juice
2 tsp low sodium soy sauce
1 packet Truvia
1 garlic clove, minced
1 tsp Mrs. Dash Garlic Herb Blend
Directions
Preheat oven to 400 degrees F.
Put garlic and spices (paprika, ginger, Mrs. Dash) in a food processor until it forms a paste. Add the salt, Truvia, chili sauce, orange juice, and soy sauce.
Add 3/4 of the rice to the paste in the food processor and process until smooth and sticky. Put this mixture into a separate bowl. Mix the rest of the rice in by hand.
After wetting your hands, shape the mixture into bite-sized balls. Put the chopped peanuts in a dish and roll the balls in them until evenly coated.
Place balls on an ungreased cookie sheet. Bake on the 2nd highest rack in your oven for 5 minutes, flip the balls over to the other side, and bake for another 5 minutes or until peanuts are a little bit more golden than they started.
Yield approximately 30 balls, 1 ball per serving.
Serve hot or at room temperature.
Suggestion: serve with peanut sauce, sweet chili sauce, and/or lime wedges.
