16 oz. Buitoni 100% Whole Wheat 3 cheese tortellini
2 32-oz. cartons Swanson Chicken Broth
1 lg can diced tomatoes (~2 cups, with juice)
8 oz. sliced fresh mushrooms
1 can black beans, drained (~1.5 cups)
2 cups chopped fresh baby spinach
1 can quartered artichokes, drained
1 medium orange or red bell pepper, cubed
1 medium yellow onion, chopped
4 cloves garlic, diced
2 tsp oregano
2 tsp basil
1 tsp paprika
Spray a saute pan with cooking spray. Cook onion, pepper, garlic. Season with oregano, basil, paprika. Saute until tender. Add to stock pot.
Once the combined stockpot comes to a boil, add the tortellini and boil for 10 minutes.
Ladle into bowls, sprinkle with 1 tbsp grated Parmesan, serve.
Makes 8 1.5-cup servings.
