Ingredients

    1 med onion
    3 med carrots,
    3 cups cubed butternut squash
    1/2 med cabbage
    3/4 C dry millet
    10 cups water
    salt
    pepper
    garlic
    miso

Directions

chop onion, peel and dice squash, chop carrots, chop cabbage. Saute all in stock pot, 5-8 minutes until beginning to soften. Add millet, water, salt, pepper, garlic and simmer for about 35 min until vegetables are tender. Add miso (or packet of instant miso soup) for flavoring, stir and serve. Makes 14 1-cup servings
