2 large (6 oz each) Boneless, skinless chicken breasts
1 cup prepared Stove Top Chicken stuffing mix
2 slices reduced fat swiss cheese
I used a Fat Free I Can't Believe It's Not Butter to make the stuffing, so it was minimal calories added - Your nutritional values might be different depending on the product you use.
Prepare stuffing according to package directions and set aside.
With a kitchen mallet, pound chicken breasts to about 1/2" thickness
Place a slice of cheese on each chicken breast, followed by 1/2 cup of prepared stuffing
Fold up chicken breasts and secure with toothpicks.
Place in a baking dish and cook for 35-40 minutes or until cooked through.
Can top with gravy if desired (not in nutritional information)
