Yukon Gold Potato, 16 oz ( four medium)
Grapeseed Oil, 3 tbsp (or other oil of your choice)
*Red Onion Raw (1/4 cup - rough dice)
Boil for ten minutes in salted water, until soft yet still firm
Heat oil on med high in skillet, add onions to brown
Drain potatoes and add to skillet
Turn carefully when one side of slice is brown, about seven minutes. Don't rush them!
Brown second side until crispy.
Season with salt and pepper
Makes two big servings
