Zucchini Beef

Introduction

Number of Servings: 4

Ingredients

    12 oz very lean ground beef(96% or better)
    1 medium onion, diced
    2 cloves garlic, minced
    1 cup tomato sauce
    1 teaspoon basil
    1/2 teaspoon oregano
    1/2 teaspoon salt
    1/2 teaspoon pepper
    2 cups cooked pearled barley
    2 cup nonfat cottage cheese
    2 eggs
    2 1/2 oz grated mozzarella cheese

Directions

brown and crumble ground beef. Add chopped onion and garlic, cook for another minute or two til soft. Add spices, tomato sauce and cooked orzo. Simmer for 10-15 minutes.

Wash, slice and slightly parboil zucchini. Place a layer in bottom of non stick dish. Salt and pepper zucchini to taste. Top with ground beef mixture.

Gently mix eggs in a bowl. Add cottage cheese and blend. Top meat mixture with cottage cheese. Top with another layer of sliced zucchini. Salt and pepper zucchini layer to taste. Top with mozzarella cheese. Bake at 350 for 30-40 minutes. Serves 4
