Braised Salmon in White Wine

Introduction

This is a light, quick and tasty dinner for one. but it can easily be adapted for more by doubling or tripling the recipe. It's easy to adapt to different tastes by simply adding other spices to the salt and pepper. I like using a caribbean spice blend. Serving suggests; serve with brown rice (not included in nutritional information). Ingredients

    Salmon filet, 4 oz
    4 oz White Wine
    1/4 bulb Fennel
    1 cup Baby bella mushrooms, sliced
    1 tsp. Extra Virgin Olive Oil
    Juice of 1/2 lemon
    salt and pepper to taste

Directions

Thinly slice 1/4 of a bulb of fennel. Preheat skillet with 1 tsp olive oil, add fennel and sliced mushrooms. Season with salt and pepper. Add half the white wine and saute approximately 5 minutes to soften vegetables. While vegetables are cooking season salmon filet with salt and pepper to taste. Add salmon to skillet with vegetables, add remaining white wine and lemon juice. Braise (cook in liquid) the salmon approximately 15 minutes, until salmon is opaque and flakes with a fork.
