Jims chicken Tex Mex

Ingredients

    1/2 cup tomato sauce, 1/2 cup black beans, 1 cup frozen corn, 6 tbsp pace picante sauce medium, 2 tsp blackened seasoning, 1 tsp chicken seasoning, 1 tbsp olive oil, 3 ounces of boneless, skinless chicken breast, 1/4 cup water, 1/2 cup cooked basmati brown rice

Directions

Put tbsp of olive oil in a pan and place chicken breast in pan. Cook until chicken is done. Break chicken up into small pieces. Add 1/2 cup tomato sauce, 1/2 cup black beans, 1 cup frozen corn, 6 tbsp pace picante sauce, 2 tsp blackened seasoning, 1 tsp chicken seasoning and 1/4 cup of water. Bring to a boil and then let simmer. Stir occasionally. Simmer for about 20 to 25 minutes or until desired thickness. Add 1/2 cup cooked basmati brown rice. Makes 2 servings.
