Coach's Oatmeal Cookies

Number of Servings: 60

Ingredients

    1 cup of packed brown sugar
    1/2 cup sugar
    3/4 cup of butter
    2 eggs
    2 tsp. vanilla extract
    1 tsp. baking powder
    1/4 baking soda
    1 3/4 cup all purpose flour
    1/4 tsp. salt
    2 cups Coach's Oats
    1 cup raisins

Directions

Makes 60 cookies
Preheat oven to 375 degrees. In a mixing bowl, cream together the sugars and butter. Mix in the eggs, one at a time. Mix in vanillas. Add combined baking powder, baking soda, flour, salt and cinnamon. Mix well. Stir in oats and raisins(raisins optional). Drop rounded teaspoons onto a ungreased cookie sheet. Bake for 12-15 minutes or until edges are golden. Cool cookies on a wire rack.
