Lentil Soup

Ingredients

    4 cups dried red lentils
    1 large onion chopped
    6 medium carrots, peeled & chopped
    3 large tomatoes, chopped
    2 Tbsp olive oil
    5 cloves garlic, crushed
    12 cups fat free chicken broth
    salt & pepper to taste
    dried thyme leaves (1Tbsp)
    dried oregano (2 Tbsp)

Directions

Makes 8 2-cup servings
In a VERY large pot saute onions and garlic in olive oil. Add tomatoes and cook down for 5 minutes. Add salt, pepper, thyme leaves, oregano, chicken broth and lentils. Bring to a boil. Cover and turn to low. Simmer 30 minutes, stirring occasionally. Let cool. Puree in blender, re-heat and serve. Extra can be frozen.
