Turkey was cooked using Chef Meg's Roasted Chicken with Herb Oil. Prep time was short because I froze the turkey once I finished cooking it. Ingredients

6 oz roasted turkey breast, chopped
2 Tbsp celery, chopped
2 Tbsp bell peppers, chopped
2 Tbsp red peppers, chopped
4 tbsp Helman's light mayo
Directions
Chop turkey, add to mixing bowl. Add chopped vegetables and light mayo. Mix to desired taste.
Serve on 2 slices whole wheat bread, or crackers of choice. Makes 2- 3 oz servings.
