Introduction

This is just one variation. It depends on what is available at the time but always use onions, garlic, and peppers (any variety will do) I mostly use this as a filling to my omlets I top with swiss cheese and cherry tomatoes, no included in nutritional value. Number of Servings: 2

Ingredients

    Eggplant, 1 cup (1" cubes)
    Spinach, fresh, 2 cup
    Jalapeno Peppers, 1 pepper
    *Canola Oil, 1 tbsp
    Zucchini, .5 cup, sliced
    Onions, raw, .25 cup, chopped
    *Hot Chili Peppers, 1 pepper
    Banana Peppers, 3 small (4" long)

Directions

Chop all veggies. Start by heating pan with 1T or less of canola oil. Onion first then peppers. Then zucchini and eggplant until browned. I then top with garlic and spinach until wilted then stir. Salt and pepper to taste. Makes 2 1 cup servings.
