Introduction

Pecan Flour is used to keep these little treats in the lower carb range but they do not skimp on flavor! Keep them in the freezer so you don't overindulge! Ingredients

    1/2 cup butter, melted
    1/2 cup unsweetened cocoa powder
    1 Tablespoon maltitol syrup
    1/4 cup Splenda Granular
    1/4 cup Whey Low Granular
    1/4 cup Sweet Simplicity Sweetener
    2 eggs
    1 teaspoon vanilla extract
    1/4 cup pecan flour
    1/4 cup spelt flour

Directions

Preheat oven to 300 degrees

Mix melted butter, maltitol syrup and cocoa until smooth. Add vanilla, Splenda, Whey Low and Sweet Simplicity Sweetener. Stir until sugars disappear into the mixture.

Add eggs one at a time, stirring after each addition.

Add pecan flour and spelt flour. Mix just until smooth. Pour batter in a parchment lined 8 x 8 inch pan that has been sprayed with PAM.

Bake at 300 degrees for 13 minutes. Cool completely in pan. For best results, freeze prior to cutting. Remove from pan when frozen and cut into 16 equal portions.

Serve with sugar free vanilla ice cream or a drizzle of sugar free chocolate ganache made from cream and a sugar free dark chocolate bar.
