Introduction

I make this from boiled chicken carcasses -- the old fashioned way. It is a bit of a labour of love, but you get all the healthy things that are in Gramma's home made chicken soup. I make this from boiled chicken carcasses -- the old fashioned way. It is a bit of a labour of love, but you get all the healthy things that are in Gramma's home made chicken soup.
Number of Servings: 14

Ingredients

    2 chicken carcasses (or 200 gm chicken, fat removed)
    4 cups low sodium chicken broth
    1 19 oz can black beans, rinsed and drained
    2 cups mushrooms diced
    5 stalks celery diced
    2 cups chopped onion
    2 sprigs rosemary
    3 bay leaves
    1 tsp poultry seasoning
    pepper to taste

Directions

Cover chicken carcasses with water, simmer several hours until all meat falls off bones.
Cool and skim off all fat.
Remove bones.
(or just add 200 grams chicken meat)

Add remaining ingredients excepts beans.
Simmer 2 hours.
Add beans.

Makes approximately 14 one cup servings, depending on amount of water added.
