3 boneless, skinless chicken breast
1 can Rotel tomatoes
1 can Ortega black beans, drained and rinsed
6 Mission Low Carb Tortillas, soft taco size
ground cumin, to taste
salt, to taste
Add 1/2 cup chicken mixture to 1.5 cups salad for a chicken "taco-less" salad.
Serve chicken and beans with Lay's Baked Tortilla Scoops for low-fat chicken nachos.
