Number of Servings: 6

Ingredients

    1 can low-fat Cream of Chicken Soup
    1 1/3 cups water
    3/4 cup uncooked basmati brown rice
    1 garlic clove minced
    1 large onion chopped
    2 celery stalks sliced
    dash ground black pepper
    2 cups broccoli flowerets
    4 skinless, boneless chicken breasts halves cubed
    1 cup shredded low fat Cheddar cheese

Directions

Directions: Stir the soup, water, rice, garlic, black pepper and vegetables, and chicken in an 11 x 8-inch (2-quart) shallow baking dish. Cover.

Bake at 375F. for 50 minutes or until the chicken is cooked through and the rice is tender.

Top with cheese. Let casserole stand for 10 minutes. Stir before serving.
