red beef enchiladas

Ingredients

    12 corn tortillas
    2 tbsp olive oil
    1 1/2 cups shredded cheddar cheese
    1 1/2 cups shredded pepper jack cheese
    1/2 pound extra lean ground beef
    1/2 large can red enchilada sauce
    2 cloves of garlic
    1 can drained and rinsed black beans

Directions

Brown the ground beef, add minced garlic to the beef while it is cooking. After it is browned, add half of the enchilada sauce to the meat, and let it simmer.
Heat oil in a skillet on high for a few minutes.
Soften the tortillas in the oil on both sides for about 30 seconds per tortilla. Set aside on a plate.
Put the enchilada together by putting a spoonful of meat sauce into the tortilla, followed by a sprinkling of the combined cheeses. Roll the enchilada, and place in a baking dish. Repeat until all of your tortillas are filled. Pour the remaining sauce over the top of your enchiladas, and sprinkle with the remaining cheese. Cover and bake at 375 degrees for 30 minutes. Makes 12 servings. Enjoy!
