Yummy Veggie Lasagna

Introduction

Number of Servings: 6

Ingredients

    Whole Wheat Egg Lasagna Noodles, 150 gram(s) =9 lasagna noodles
    Prego Organic Tomato and Basil Pasta Sauce, 3 cup= 1 jar
    Sargento Whole Milk Old Fashioned Ricotta Cheese, 1.75 cup - 15 oz. package
    Mozzarella Cheese, part skim milk, 10 oz= 2.5 cups
    Feta Cheese, 4 oz package
    Sliced Black Olives, canned, 8 tbsp = 2.25 oz can
    Mushrooms, fresh, sliced, 173.6 grams = 6.2 ounces
    3 Roma Tomatoes, sliced
    Parsley, dried, .5 tbsp
    Onions, raw, 1 small
    Garlic, 1 clove

Directions

1. Preheat oven to 400 degrees. Grease an 8 x 10 (or 9x9) baking dish.
2. Combine the ricotta and feta cheese with one cup of the mozzarella cheese. Sprinkle in the parley and garlic.
3. Pour in 3 or 4 tablespoons of the sauce to coat the bottom of the pan. Cover with 3 overlapping lasagna noodles (I use the no-boil noodles). Add 3 more tablespoons of sauce and half the cheese mixture.
4. Spread half the mushrooms, all of the onion and all of the black olives. Add 3 tablespoons of sauce and another layer of 3 lasagna noodles. Add 3 more tablespoons of sauce and the other half of the cheese mixture. Layer the rest of the mushrooms on top with 3 or four slices of the tomatoes. Add 3 more tablespoons of sauce.

5. Put on the final 3 lasagna noodles and cover with the remaining sauce. Sprinkle the rest of the mozzarella cheese over the top. Put the rest of the roma tomato slices on top of the cheese (It makes it look pretty!)

6. Cover with aluminum foil and put in the over for 50 minutes. Uncover and cook for 5 more minutes to completely melt the mozzarella cheese on top. Let stand 10-15 minutes before serving.
