Stewed Acorn Squash

Introduction

This is a wonderful side dish for any type of meat. I think if you put it in the blender, it would also make a terrific soup. This is a wonderful side dish for any type of meat. I think if you put it in the blender, it would also make a terrific soup.
Number of Servings: 16

Ingredients

    8 cups Acorn Squash
    8 Tbsp. Margarine
    1 cup, unpacked, Brown Sugar
    1 Tbsp Cinnamon
    1 tsp Salt
    1/4 cup Pecans, chopped fine

Directions

Peel and cube squash.
Add water and cook until tender.
Add margarine, brown sugar, Cinnamon, Salt & Pecans. Simmer until flavors blend.
Serve
Makes 16 1/2 cup servings.
