Introduction

Number of Servings: 6

Ingredients

    3 lbs of butternut squash( 1 large) halved , lengthwise and seeds removed
    1 tbs olive oil
    2 large sweet potatoes
    1 large onion chopped
    white part of leek chopped
    2 tsp chopped, peeled fresh ginger
    8-10 cups of your favorite vegetable broth
    white pepper to taste( I use black)
    2-3 tbs fresh lemon juice to taste
    1 tbs honey(optional)
    chipotle sauce

Directions

bake squash and sweet potato until fork tender about 50 minutes
when cool scoop out the flesh of both items and place in a bowl, disregard the skin/ shell
Cook onions in oil with salt to taste in a 6 qt heavy pot over moderately high heat, stirring occasionally, until golden color( 10minutes or so). Stir in squash and sweet potatoes, leek, ginger, and stock and simmer( uncovered) stirring occasionally, for 30 minutes.
Puree batches in the blender( use caution when blending hot liquids) , transferring to a clean pot. Bring to a simmer and , if too thick add more stock,.Season with salt and pepper. Finish with lemon jice and if desired honey.
Serve soup with some chipotle sauce or swirl sauce in to make a pattern.
