Gluten free pasta

Introduction

Wonderful homemade noodles for chicken and noodles, beef and noodles or just plain buttered noodles. Wonderful homemade noodles for chicken and noodles, beef and noodles or just plain buttered noodles.
Number of Servings: 1

Ingredients

    1/3 cup tapioca flour
    2 T. potato starch flour
    1/3 Cup cornstarch
    1/2 teaspoon salt
    1 T. xanthan gum
    2 large eggs
    1 T. vegetable oil

Directions

Combine flours, cornstarch, salt and xanthan gum. Beat eggs lightly and add oil. Pur egg into flour mixture and stir. Work to form and ball and knead a minute or two. Dust counter with cornstarch and roll as thin as possible. It will take some muscles. This dough is tough. Slice into thin strips, cut as desired. Let noodles dry out for about an hour and cook as desired. Cook in salted boiling water with 1 T of oil added for 10-20 min or desired tenderness.

The calories are for the total recipe. I always double the recipe and freeze half. It makes 3 servings of noodles alone.

When I am making chicken and noodles I had them the last 30 min.
