Butter Bean Saute

Ingredients

    1 can butter beans(15oz)
    1 Tbs. olive oil
    1 small onion ,chopped
    2 cloves garlic minced
    1 zucchini about 6 oz, quartered and cut into 3/4 pieces
    1 tsp. sugar
    2 Tbz. lemon juice
    1 tsp lemon zest
    1/2 tsp salt
    1/8 tsp cayenne pepper
    1 jar of roasted red peppers drained, cut into 1/2 inch wide strips
    2Tbs. parsley

Directions

Set aside 2 Tbs liquid form beans. Drain and rinse beans; set aside. In skillet heat oil over medium-high heat. Add onion and garli; cook until softend about 4 minutes. Stir in zucchini and sugar; cook until onoin is lightly browned, 6 to 7 minutes. Stir in lemon juice, zest,salt,cayenne and reserved bean liquid; cook 30 seconds. Stir in pepper strips and reserved beans; cook until beans heat thourgh, about 2 minutes. Remove from heat and stir in parsley.
