Quick Macaroni and Cheese

Ingredients

1 box Whole Wheat Elbows or Mini Shells (approximately 14 oz)
2 cups Nonfat Milk
1.5 cups Reduced Fat Sharp Cheddar Cheese, shredded
2.25 cups Reduced Fat Colby-Jack Cheese, shredded
2/3 cup Low Fat Mozzarella Cheese, shredded
Ground Pepper to Taste
For top:
1/4 cup Reduced Fat Sharp Cheddar Cheese, shredded
1/4 cup Low Fat Mozzarella Cheese, shredded
Directions
Preheat oven to 350º.
Cook pasta according to directions. Drain and return to pot.
Combine ingredients, except for cheese for topping, to pot. Cook over low heat, stirring constantly, until the cheese melts. Pour into 9x13 pan. Sprinkle cheese for topping over noodles. Place in oven and bake until top is melted and crispy, approximately 10-15 minutes.
*Can also be served directly from the stop top without adding the extra cheese and without baking.
