Italian Spaghetti Squash Bake

Introduction

Number of Servings: 6

Ingredients

    6 cups cooked spaghetti squash
    1/2 cup fresh parsley chopped
    5 pieces sun dried tomatoes (cut in small pieces)
    2 Tbsp green olives chopped
    3 cloves garlic chopped
    2lb chicken breast
    6 oz turkey smoked sausage
    2 cups Italian five cheese
    4 Tbsp. Fat Free Italian dressing

Directions

Makes about 12 cups.
6 2-cup servings.

I microwave the spaghetti squash in the microwave for 15 minutes. Turning every 5 min. Let cool. Cut length wise and scoop insides out. I usually get about 6 cups for one good sized squash. Place in mixing bowl.

Cook chicken. Cut in bite size pieces. Add to mixing bowl.

Slice turkey smoked sausage. Saute with red onions. Add to mixing bowl.

Add remaining ingredients - chopped fresh parsley, sun dried tomatoes, chopped olives, diced garlic, Italian dressing and cheese.

Mix well. Pour in baking dish. Bake at 350 for about 20-30 min.
