1 c uncooked brown rice (3.5 cups cooked)
1/2 c each of: shredded carrots, broccoli, zucchini
1 c Baby Portabella Mushrooms
1 Tbs Peanut Oil
2 Tbs Soy Sauce
1 tsp Garlic Paste
Salt and Pepper to taste
Heat wok or large skillet. Place oil and egg in wok and scramble egg. Add veggies, soy sauce, garlic and cook till almost tender. Add rice and stir. Cover and cook until veggies are done to your preference. Salt and pepper to taste. Makes about 4/1 cup servings.
