Sliced Tomato Salad w/ Cucumber Dressing

Ingredients

    Red Wine Vinegar, 3 tbsp
    Olive Oil, 1/4 cup
    Honey, 1 tsp
    Cucumber 1 medium (peeled, seeded and diced)
    *Peppers, sweet, red, fresh, 1 (seeded and diced)
    Onions, raw, 1 medium (diced)
    Parsley, 1/4 cup (chopped)
    Red Ripe Tomatoes, 1 large whole (3" dia)

Directions

For dressing, combine vinegar, oil, cucumber and honey. Season with salt and pepper. Whisk until blended. Set aside.

Combine diced red peppers, diced onions, and diced tomato. Toss with dressing, top with chopped parsley and serve.
