Hiking Muffins

Introduction

High in protein and fiber, with raisins for the quick sugar boost that you need when hiking! High in protein and fiber, with raisins for the quick sugar boost that you need when hiking!
Number of Servings: 12

Ingredients

    1 cups whole wheat flour
    cup hemp-seed flour
    cup wheat bran
    2 tsp baking powder
    1 tsp salt
    1 cup milk
    1 cup raisins
    2 large eggs

Directions

Stir together the dry ingredients in one bowl.
Stir together the wet ingredients in a smaller bowl, then fold into the dry ingredient bowl.
Bake at 350F until done, about 10-15 minutes.
Makes twelve standard muffins.

    I searched all over the twin cities at grocery stores, whole foods, and nutrition stores and could not find Hemp seed flour. I used whole wheat flour instead. The muffins were dry and did not have much flavor. - 1/13/09
