Chunky Chicken Chili

Ingredients

    4 TBSP butter
    2 chicken breasts cut into bite sized pieces
    1/4 cup flour
    1 cup chopped onion
    1/2 cup chopped roasted red pepper
    2 cups chicken stock
    1 cup skim milk
    2 TBSP chili powder
    1 tsp cumin
    1/4 tsp cayenne pepper
    2 cans rinsed and drained white beans
    1/2 cup reduced fat sour cream

Directions

Melt butter over medium-high heat. Brown chicken pieces until nicely colored and cooked through. Remove chicken and set aside.

Using same pan stir in flour. This will create a roux. Stir in the onions and peppers. Add chicken stock and milk. Lower heat and cook until the mixture thickens, about 5 minutes. Once the sauce has thickened, add chili powder, cumin, and cayenne. Stir and cook for a few minutes. Add beans and chicken and simmer another 6-8 minutes. At the very end, mix in the sour cream. Top with cheddar cheese (Cheese is not included in nutritional content)
