1 12" Whole Wheat Pizza Crust (I use Mama Mary's)
1 15 oz. can kidney beans (drained and rinsed)
3/4 cup salsa
crushed red pepper (optional)
1 green pepper
1 small onion
1/4 cup sliced olives (black or green)
1-1/2 cup shredded cheddar cheese
2 tablespoons chopped fresh cilantro (optional)
*Drain and rinse beans. Measure out 3/4 cup beans into a small bowl and mash with a fork -- can still have a chunky texture. Mix in the 3/4 cup salsa. Spread the bean and salsa mixture on the pizza crust
* Sprinkle the bean mixture with crushed red pepper as desired. Then top with the remaining beans, the thinly sliced green pepper and onion, the olives, and the cheddar cheese.
*Place in the oven either on a pizza pan or directly on the oven shelf if you like a crispier crust. Bake for about 12 minutes until cheese is melted and veggies are done to your liking.
*Remove from oven and sprinkle with the chopped cilantro. Cut into 8 wedges. Serving size is 2 pieces.
