Banana Oatmeal Blueberry Muffins

Number of Servings: 12

Ingredients

    1 cup whole wheat flour
    1 cup dry oats
    1/4 cup packed brown sugar
    1 cup dried blueberries
    1 egg white
    1 egg
    2 Tbsp canola oil
    .5 cup plain non-fat yogurt
    1 cup mashed banana
    .5 tsp baking soda
    1 tsp baking powder
    2 tsp vanilla
    pinch of salt


Directions

Makes 12 muffins.

- preheat oven to 400F
- whip egg white for about 3 minutes, until firm but not stiff
- combine egg white with banana, yogurt, egg, blueberries, vanilla, and oil
- in a large bowl, combine flour, oats, baking soda, baking powder, salt, and sugar
- fold wet ingredients into dry mixture
- spray muffin tin with cooking spray, spoon batter into tins
- bake for 20-25 minutes, until a toothpick inserted into the center comes out clean

  • Substite 1/2 cp oat flour for rolled oats. Use only 1/2 cp wheat flour. Add 3/4 wheat bran. Only use2 tbsps brown sugar. I added 3/4 cp splenda, add 1 cup extra blueberries, walnuts would be good. - 10/17/09
