Introduction

Number of Servings: 8

Ingredients

    1 lb chicken breast cut into strips
    1 tsp. peanut oil if not using an non stick pan
    1 package raw coleslaw mix with carrots
    2/3 c. sliced green onions
    1 tsp. fresh grated ginger
    1 tsp. corn starch dissolved in 1/4 c. water
    8 crepes from crepes recipie. (double the recipie to make bigger crepes)
    1/3 c. hoisin sauce
    Marinade:
    2 Tbs soy sauce
    2 Tbs water
    1 Tbs sesame oil
    3 cloves garlic crushed
    2 tsp fresh grated ginger
    2 tsp splenda

Directions

Pre cook your crepes and have them covered with foil and in the oven on warm until you are ready to plate.

Combine sliced chicken in medium bowl and marinade ingredients tossing to coat. Cover and let sit for 10-15 min.
After chicken is done marinading remove chicken and discard marinade.
Next heat wok to medium-high with peanut oil or use a non stick pan. Add chicken and stir-fry until chicken is white 3-5 min.
Add coleslaw mix, green onions, ginger and cornstarch mixture. Cook until sauce is thickended and bubbly.
To assemble spread one side of the crepe with 1 tsp of hoisin sauce, spoon 1/2 cup chicken veggie mix into center.
Fold bottom edge up over filling and fold right side in. Then roll up like a open ended burrito. (see picture)
It makes 8 wraps.
