Chocolate Zucchini Muffins

Number of Servings: 18

Ingredients

    1/3 cup water, boiling
    2 cups zucchini, shredded
    1 1/2 cups flour
    1/2 cup cocoa baking unsweetened
    3/4 cup sugar
    1 1/2 teaspoon baking soda
    1 teaspoon salt
    1 teaspoon cinnamon
    1/2 cup canola oil
    2 eggs
    1 teaspoon vanilla
    18 teaspoons powdered sugar, optional

Directions

Preheat oven to 350 degrees. In large bowl, pour boiling water over zucchini. Add all other ingredients and stir just until well combined. Line muffin pans with paper muffin cups or spray with cooking spray. Use a 1/4 cup measure to pur batter into cups. Bake for 30 minutes. Yields 18 muffins. If desired, sift powdered sugar over warm muffins.
