Introduction

A spicy tortilla soup with ingredients you probably have on hand. It's okay to top with a bit of sour cream, cheese and tortilla chips - I have calculated them into the totals. Ingredients

    3/4 c. chopped onion
    3 cloves garlic, minced
    2 tsp. chili powder
    1/2 tsp. cumin
    1/2 tsp. dried oregano
    3 cups chicken broth
    1 cup corn (canned or frozen)
    4 oz can chopped green chili peppers
    1 cup canned black beans
    1 cup canned pinto beans
    1 lb chicken breast, cubed
    16 oz can tomatoes
    8 oz can tomato sauce
    8 tbs. salsa
    2 Tbs. + 2 tsp sour cream
    1/2 cup cheddar cheese, shredded
    Tortilla chips (I have counted 3 chips per serving), crushed

Directions

Saute onion and garlic in large pot with non-stick cooking spray. Add chicken and brown slightly. Add seasonings and cook about 2 minutes. Add remaining ingredients except salsa, sour cream, cheese and chips. Simmer 30 - 45 minutes until flavors blend. Serve in soup bowls topped with salsa and cheese (1 Tbs. each), sour cream (1 tsp.) and chips (3 per serving) crushed.
