Basil and Garlic Stuffed Chicken Breasts

Ingredients

    4 Tbsp grated parmesean cheese
    2 Tbsp Basil
    2 cloves garlic, minced
    1/2 tsp finely shredded lemon peel
    2 Tbsp lemon juice
    2 Tbsp Olive Oil
    2 - 3oz boneless, skinless chicken breasts cut in half, length-wise

Directions

In a small bowl, combine the cheese, basil, garlic and 1 Tbsp oil. Set aside.

Place each chicken breast half between 2 pieces of plastic wrap. Using the flat side of a meat mallet, pound lightly to about an 1/8-inch thickness. Remove plastic wrap. Spread cheese mixture on chicken. Fold in sides of chicken and roll up, pressing the edges to seal. Fasten with toothpicks.

For sauce, combine lemon peel, juice and other Tbsp of oil in small bowl and set aside.

For a charcoal grill, arrange medium-hot coals around a drip pan. Place chicken on rack about drip pan. Cover and grill for 25-30 minutes, brushing occasionally with sauce the last 10 minutes of grilling. For a gas grill, preheat and reduce heat to medium. Grill with indirect heat.

**Can also be done very easily in the oven. Cook at 350 degrees until chicken is no longer pink (approx. 30 minutes). Just use lower rack, cover pan with chicken with foil and remove foil for the last 10 minutes of baking to baste.
