2.5 cups vegetable broth
1 cup uncooked millet
1 cup snow peas, chopped
1 cup broccoli, chopped
small can water chestnuts, sliced
small can bamboo shoots
4 scallions, chopped
1 cup carrots, chopped or grated
1/4 cup rice vinegar
3Tbsp soy sauce
2 tsp splenda
3/4 tsp pepper
1/4 cup peanut oil
In a large bowl combine all vegetables. Fluff the millet with a fork and add it to the vegetables.
Separately mix the vinegar, soy sauce, sugar, pepper and oil into a dressing. Drizzle over the millet and vegetables, and stir until everything is coated. Chill at least 2 hours. Yields 6 servings, approximately 1 cup size.
