Introduction

Very fulfilling. If desired, reduce salt by using low salt broth and tomatoes and limiting parmesan cheese. Reduce fat by choosing a meatier salt pork. Very simple after everything is chopped. Ingredients

    1/4 c. salt pork, chopped
    1 clove garlic, minced
    1 small onion, chopped
    7 c. chicken broth or bouillon
    1 TB dried parsley
    1/2 tsp basil
    1/2 tsp oregano
    1 c. celery, sliced
    1 c. carrots, sliced
    1 c. zucchini, sliced
    1 c. green beans
    1 can Pinto beans
    1 can stewed tomatoes, undrained
    3/4 c. seashell macaroni
    grated Parmesan cheese

Directions

In Dutch oven, cook salt pork until partially rendered. Add onion and garlic and saute until tender.

Add all additional ingredients except macaroni and Parmesan. Bring to a boil, reduce heat and simmer one hour. Add macaroni and simmer 30 minutes longer (adding water if needed as macaroni cooks).

Dish up and sprinkle with Parmesan.

Makes 5 servings.
