HEALTHY WESTERN EGG MUFFIN

Introduction

I love western omlettes... these are easy to make and good for freezing and taking with you when your in a rush I love western omlettes... these are easy to make and good for freezing and taking with you when your in a rush
Number of Servings: 18

Ingredients

    shady brook farms turkey sausage, 6 serving
    Onions, raw, .5 cup, chopped
    Green Peppers (bell peppers), 0.5 cup, chopped
    *Extra Virgin Olive Oil, 1 tbsp
    Cheddar or Colby Cheese, Low Fat, 1 cup, shredded
    Egg, fresh, 12 large
    Milk, 2%, .5 cup

Directions

Preheat oven to 350
brown sausage drain off liquid
in hot frypan add olive oil, onion & green pepper - cook until soft - add to meat

in a large bowl beat eggs with milk and cheese - add meat mixture.

Spay muffin tins with non stick spray

divide mixture equally (I used a 1/4 cup measuring cup worked perfect)

bake 30 minutes

let cool and refrigerate or freeze

  • I've made these several times. All the family likes them. Flavor wise they are awesome! A good muffin pan is neccesary, and lightly greasing the pan with crisco shortning is better then non -stick spray. I realize that may up the calorie count, but I found the spray wasn't good enough - 3/26/12
